1 1/2 weeks Down 4 1/2 to go…
Okay so your a week and a half into the Paleo Challenge…How’s it going?
Here are a couple rules of thumb to keep in mind:
1. Are you smarter than a second grader? If you are make sure you are NOT when it comes to reading labels. If a second grader can’t pronounce it, IT’S NOT PALEO!
2. Just because it is “Paleo” doesn’t mean you can eat the whole batch…(you know who you are)! Moderation still applies in the world of Paleo.
3. Make sure you are eating protein at each meal and ideally snacks. If you goal is to lean out focus more on veggies over fruit and avocados, oils and coconut over nuts.

So really how is it going? What has been your biggest challenge so far? What successes have you had? Speak up we are all in this together.

yes, I know who I am…. I’m addicted to the bananna paleo muffins. I seriously can’t stop eating them.

By biggest challenge is vegetables!!! I hate them. I have to practically choke them down. I also probably eat too much fruit.

The first 2-3 days were an adjustment, but now I’m in the groove. It helps to make it a routine: I take a gallon jug of water to work every day, I go EVERYWHERE with a small cooler of good food, I only eat out of the fridge, I treat the pantry as a hazardous waste zone, I make meals each night for the next day, I make Paleo a game/challenge, my son Paul and I constantly check on each other, I record everything I eat. My biggest challenge: unable to gain weight (my goal). Successes: Enjoying fresh food. I imagine I’m a caveman and haven’t eaten for 2 days when I happen upon my food; it has an amazing taste with that mindset.

Biggest challenge is cooking for one person and maintaining correct portion size without wasting food in a life full of travel. any suggetions?

Veggies have been hard for me too, I don’t hate them, I just don’t keep them as accessible as I do fruit. I need to have some for grab and go. The hardest thing to avoid is cheese. I haven’t caved, but it is a challenge for sure. We can all do this!!!!

Roger – that is one of the best posts/attitudes I have seen. I am having the same problem with gaining weight. It is all about the protein. increase the protein size and decrease the veggie size just a little.
For all you veggie haters… try making a pan of roasted veggies on Sunday night and packing it in plastic containers to take with you Mon, Tues, Wed. One of our favorites is broccoli, brussel sprouts, sweet potatoes, onion and garlic. It is really a simple thing to make. Cover the bottom of the pan with olive oil, cut the brussel sprouts in half and drizzle olive oil and solt and pepper over top. Bake in the oven on 400 for 20 minutes, stir the veggies and then bake for another 20 minutes. I know what you are thinking, brussel sprouts??? Just trust me on this one.

Yes to make the Brussels even better squeeze a lime over them after you roast them I also put red chili on mine to make them spicy…you could do the same with jalapenos or whatever…I love them this way and eat them at least 2x’s a week. My biggest challenge is not losing one single pound and following this damn diet to a T!!! I have metabolism issues I am trying to get straightened out with Dr. Bosch so horray for finally figuring out why I have not lost 1lb in a year and a half of eating well and excercising! Just imagine if I wasn’t working out and eating well I would be huge…My advice is just to be prepared as much as possible and cooking food the night before seems to really help!
