Stuffed Zucchini with Turkey Sausage Recipe

Ingredients

  • 1 zucchini about 12 inches long, or 6 medium ones
  • 3 tablespoons olive oil
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1/2 cup chopped mushrooms
  • 2 tablespoons dry white wine
  • 1 pound ground turkey
  • 2 diced tomatoes
  • 3 tablespoons chopped fresh basil
  • 1 teaspoon chopped fresh rosemary
  • 3/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 2 teaspoons salt
  • 2 teaspoons pepper

Method

1 Cut zucchini in half lengthwise. Scoop out insides, leaving shells about 1/4 inch thick. Reserve about half of the insides.

2 Heat 2 Tbsp of olive oil in a skillet on medium high heat. Sauté onion and garlic until soft. Add mushrooms and reserved zucchini insides, and sauté another 2 minutes.

3 In a separate skillet heat a Tbsp of olive oil on medium high heat. Add the ground turkey. Lightly brown the turkey, stirring only occasionally. After the turkey browns on one side, stir it so that it has a chance to brown on other sides. Cook until the ground turkey is lightly browned, about 6 minutes. Stir in the onion and mushroom mixture from the other pan. Add the wine. Stir in tomato, basil and rosemary and cook 1 minute longer. Drain any excess fat. Remove mixture from heat and set it aside.

4 When mixture has cooled, add cheese, egg, salt and pepper. Fill zucchini shells with mixture. Fill a baking pan with 1/4 inch of water. Place filled zucchini halves in pan and bake at 375 degrees for 40 minutes, until golden brown. Remove zucchini from pan and serve while hot.

Serves 4.

    CrossFit Scottsdale Yoga Takes Flight

    While there are many over laps between CrossFit and yoga, one of the most obvious involves inversions (ex: handstands and headstands) and arm balances. In my own yoga practiced prior to CrossFit these “flying” poses were a source of frustration. They were always the most fun to watch others do but I just could not seem to get them myself. It has only been since I began CrossFitting in conjunction with my yoga practice that I have been able to begin to master these poses.

    In class I watch fellow students struggle with similar CrossFit gymnastics moves. The CrossFit Journal Article entitled The Russian Gymnastics Warm-up summed it up best.

    “Most beginners, (especially ladies) desperately lack the ability to perform pull-ups and dips, while more advanced guys aspire to perform dead-hang muscle-ups, levers, free-standing handstands push-ups and planks.” The article goes on to describe a warm-up that was designed specifically to help athletes develop the body weight competency, flexibility and strength required to perform more advanced gymnastics skills.

    One of the movements in the warm-up is the tri-pod. The tri-pod is the first step in yoga required to work towards headstands. With this as inspiration and with my strong desire to make gymnastics movements not only fun to watch but fun to do, Friday’s CrossFit Scottsdale Yoga class will begin to incorporate headstands. CrossFit Scottsdale yoga students will begin to take flight and hopefully see the results and benefits in their gymnastics movements.

    What do you bench press?

    What do you bench press? Who cares! Seriously. One of the most nonfunctional of all the strength lifts we do in real life application. Unless your a mechanic and a small VW beetle falls on your chest and you need to push it off. Seriously… I use to be proud of my 1x rep max bench (#315) . Now I don’t know what it is. So today we are going to pull out the bench and test ourselves.
    Warm up
    30 Jumping pull ups
    10 Knees to elbows
    Inch worm
    3x
    Work
    Bench press  to failure 155/#65
    Row 500 meters
    Double unders the # of reps you did on bench press.
    Example 21 bench= 21 double unders

  • Sun 1/17 meet up information for the 1/2

    For those who are running in the 1/2 tomorrow and want to carpool down to the start line meet at the gym at 6:30am. There will be a pre-race stretch before the race.

    For those of you who want to cheer the CrossFit Scottsdale team on at the finish line, we will be meeting at the gym and carpooling down to Tempe at 9am.

    Plan to meet at the letter Q in the surface parking lot after the race to meet up with your teammates. Good Luck!!

    Fight Gone Bad

    The CrossFit workout is ‘Fight Gone Bad.’ In this workout you spend one minute at each of five stations, resulting in a a five-minute round after which a one-minute break is allowed before repeating. This event calls for three rounds. The clock does not reset or stop between exercises. On call of ‘rotate,’ the athletes must move to the next station immediately. One point is given for each rep, except on the rower, where each calorie is one point. The stations are:

    1.Wall-ball, 10 ft target (Reps)
    2.Sumo deadlift high-pull (Reps)
    3.Box jump (Reps)
    4.Push-press (Reps)
    5.Row (Calories)

  • CrossFit Yoga

     CrossFit Scottsdale will now be offering a weekly CrossFit Yoga class on Friday’s at 4pm

    There are those who would argue that yoga is the antithesis of CrossFit.  After all, it is a practice, not a work out.  In yoga the ultimate goal is deeper meditation through movement linked with breath, not the ability to move large loads, long distances quickly…And there is definitely no room for competition in traditional yoga practice.  So how then could anyone support the marriage of yoga and CrossFit?  The answer lies in balance.  Where as CrossFit emphasizes strength, speed, agility and endurance which require a mind body connection, flexibility and focus; yoga emphasizes a mind body connection, flexibility and focus which require strength, speed and agility.

    “Yoga has been a part of my life for the last five years and thanks to my husband in the last six months I have been blessed with the opportunity to join yoga and CrossFit in my own life.  I credit yoga with helping me to survive my first CrossFit workout.  I firmly believe that my yoga practice makes me a better CrossFitter.  The flexibility that I derive from yoga has enabled me to avoid injury and recover faster.  Thru yoga, I have developed a mind body connection that makes it easier for me to tweak and adjust my form in CrossFit. And I know for a fact that CrossFit has improved my yoga practice.  In the last six months I have made gains in my arm balances and other poses that are a direct result of the WODs I do weekly.  In my own physical fitness and athleticism I am beginning to achieve a balancethat I did not know was possible and I would not trade the results for anything. CrossFit challenges an athlete to be prepared for anything even a practice whose values on the surface may seem to be counter to those of CrossFit”.

     We challenge those of you who have never taken a yoga class to take on this new challenge, and see if you find greater balance and ultimately better results in your WOD’s (Workout of  the Day).  Each class will consist of stretching, body movement, body awarenance, balance, and flexibility exercises along with a 10 minute AMRAP (As Many Rounds As Possible) of body weight exercises only.
